Located in Tsunan-cho, Nakauonuma-gun, Niigata Prefecture, which is one of Japan’s snowiest areas, it is a local sake brewery has been producing high-quality sake loved throughout Japan for many years. Slowly and delicately handcrafted, the sake has a rich sweetness and umami flavour that satisfies both those who love sake and those who don’t. A new type of fruity sake with a refreshing, slightly sparkling taste produced by the yeast.

WAKAZE
Founded in 2015, WAKAZE creates highly innovative SAKE while utilizing traditional methods.
They have three breweries in Japan and France with the vision of “making Japanese sake into a world sake”.
WAKAZE’s SAKE is an “experience” that is not bound by the framework or rules of sake, and continues to delight people around the world with SAKE that no one has ever tasted before.

Kanzawagawa Sake Brewery – Shosetsu
Their products feature a crisp flavour and refreshing aftertaste.
The flagship item, called “Jyunmai Dai Ginjo Shosetsu Yamakage Jyunetsu commemoration edition for Kijyu-hosho Award” received 92 points when Robert Parker rated sake for the first time in 2016.
Their unconventional approach shows their pride for sake production.

Sanwa Sake Brewery – Garyubai
The brewery is very famous in Japan and they have more than 300 years of history. Every products are brewed carefully with 600kg small tanks.
Their products have an impact and rich flavor, these are completely different from Shizuoka style.
In 2021, Sanwa Sake Brewery ranked 8th in the world sake brewery ranking.

Doi Sake Brewery – Kaiun
KAIUN, the sake brand name, means “to attract or to earn good fortune”, reflecting the founder’s concern for the happiness of customers and all the people around. Doi Brewery has become a constant medal winner at Japan’s prestigious Sake Competition and an emerging gold medalist at the Global IWC.

Fuji Takasago Sake Brewery – Takasago
Founded in 1831, Fuji Takasago situates where Mt Fuji’s groundwater is abundant for use. Coming across to an ideal location for sake making, Fuji Takasago decided to run a brewery together with ‘Noto Toji’ Noto style brewing master.

Sugii Sake Brewery- Suginishiki
The Sugii Sake Brewery is a small, family-run sake brewery in Shizuoka prefecture. They are particular about traditional sake brewing methods.
Most of their products are brewed using the Kimoto and Yamahai methods. The brewery has a history of over 160 years, and proprietor, Kinnosuke Sugii, is also the master brewer.

Hamamatsu Sake Brewery – Shussejo
There is a famous castle called Hamamatsu-jo, the other name is Shussejo. Shusse means success.
The number of military commanders such as Ieyasu Tokugawa succeeded after being the lord of Hamamatsu castle, therefore the castle is known as a symbol of success. The brewery close to the castle nemed their sake Shussejo after the story.
The chief brewer is a woman, she is the first chief brewer in Shizuoka prefecture. Women’s unique sensibilities make the flavor of sake
delicate.

Michisakari Sake Brewery – Michisakari
Michisakari is an “Extra dry sake” that has a clean and crisp taste without any miscellaneous tastes, and is a sake that you should enjoy with your meal.
At the beginning of the 30’s of the Showa era, while strong sweet sake was the mainstream, while maintaining the manufacturing method inherited from the founding, they continued their efforts to make special, top-quality sake, rice polishing rate 50%, sake degree + 10 A extra dry sake “Michisakari” was born.

Kintora Sake Brewery – Kintora
Founded in 1845, Kintora is characterized by its light and smooth sake based on the Echigo style.
The brewery is loved by the locals and preserves the traditional techniques that have been followed along with the history of Nagoya.
By carefully balancing the taste, they brew sake that is easy to drink and has a wide range of taste.

Saito Sake breweryEikun
Established in 1895, the brewery is located in Fushimi, Kyoto. It produces authentic “Kyoto sake” with Kyoto rice and water.
Saito Sake Brewery is proud to brew sake using “Iwai-mai,” a special type of sake rice produced only in Kyoto and only allowed to be used by Kyoto sake breweries where they are using approximately 40% of the total “Iwai- mai” production for sake brewing. The technology developed over a long history combined with clean, modern facilities to ensure consistent quality results in high quality sake brewing.
Their sake has received numerous awards, including the gold medal in the Junmai Daiginjo category at the International Wine Challenge (IWC 2017) and the gold medal at the National Sake Competition for 14 consecutive years, and is highly acclaimed both in Japan and abroad.

Suigei Sake Brewery – Suigei

Here at Suigei, they have further explored Kochi’s table sake culture and polished their techniques to brew a rich and dry sake that exhibits “a moderate aroma” and a “distinct umami”.
